This particular organic Chiapas coffee is sourced from a producer group located in San Cristobal de Las Casas, also known as Valley de Jovel in Tzotzil. The Tzotzil people, who are the main indigenous group in Tenejapa, are responsible for the majority of coffee production in this area. Farms are typically small, with an average size of 2 hectares or less. The coffee is grown at an altitude of 1300 meters in the Jovel valley and a variety of cultivars are used, including older Typica types, Caturra, Marsallesa, and Costa Rica 95. Each farmer is responsible for processing their own harvest at home, which can result in a range of profiles from one farm to another and adds complexity to blends. Our tasting experience with this blend from the community revealed well-structured acidity and subtle top notes when roasted lightly.
